Here is one of the items I have 'redesigned' on  the Iki Moku, my 1985 West Wight Potter...The earlier model HMS 18/19 WWP didn't have the built in butane one burner stove, which is good by me as I have ended up with something I like better!

It's my "WWP Portable Galley Insert". This is before the wood pieces were painted and varnished and finished, but you can see the concept, and how well it works, even though it doesn't show how attractive it ends up being...I'll post a "finished" picture soon.





The "burner" is a coleman single burner propane stove. I choose this model because of the large size of the area for the pan, plus the large stable base. This is a BIG single burner as you can tell from the photos. The top piece of wood under the stove has a tin heat shield with air space, below that is a plastic storage unit ( a little tikes model was the best fit) , and below that the base. I live in an apartment currently and have no work area, but someone with a shop could certainly take this concept and build a great unit all out of wood. 



The drawer opens easily, has lots of storage, and because it is plastic cleans very easily.




As you can see in this picture, the bottom portion of the unit is made out of wood, and with the aft face of the unit open, it is an ideal place to store pots and pans. The raised lip prevents them from sliding out, and there is also a net that goes over the front, though it isn't shown in the picture. The Galley Unit is held in place by the shock cord with hooks to padeyes. The reason for this is that the entire unit can be taken out and used to cook in the cockpit, or taken out and used ashore when 'sail camping'. Just undo the two hold downs, and presto-chango! A portable go anywhere galley!



Here is the unit opened up into the cooking configuration, with the normal top piece mounted to be used as a counter. It almost looks like the burner is too close to the fiberglass, but that is just an effect of the picture. There is plenty of room and the set up is safe.

I believe this is much better then a built it galley unit for my purposes. I can completely remove the unit for day sailing, and because it is self contained, it is very easy to haul to the cockpit, or the beach, to utilize as a galley in those places too.
